Apple and Cream Cheese Cobbler

Ingredients:

3 medium apples, peeled and chopped
7 T. butter
1 T. cornstarch
1/3 C. packed brown sugar
1/4 C. water
4 oz. cream cheese, room temp.
1/4 C. powdered sugar
1 tsp. vanilla
1/2 C. self rising flour
1/2 C. sugar
1/2 C. milk

Instructions:

Melt 3 T. butter in a medium pot over medium high heat. Toss the apples with the cornstarch then add the apples to the pot along with the brown sugar and water. Bring up to a boil, reduce to medium and cook, stirring often, for 10 minutes. Remove from heat and let cool slightly. In a bowl, combine the cream cheese, powdered sugar and vanilla, set aside. Place the remaining 4 T. butter in a 8x8 baking dish and place in the oven to melt as it preheats to 350 degrees. Meanwhile, whisk together the last 3 ingredients, set aside. Once the oven is preheated and butter melted, remove the dish and pour the batter into the dish, do not stir, then place dollops of the cream cheese over the batter then top that with the apple filling. Do not stir any of this together. Place the dish back in the oven and bake for 35-40 minutes until nice and golden on top. Allow to cool slightly before serving.
